Jessica realized pretty quickly after culinary school and a growing career in food & beverage that it just was not the lifestyle for her. What she wanted was a place to experiment and craft in the kitchen, and she found that kind of inspiration in jam making. “Our family’s roots were in farming and the connection I found in the local farming community spurred my concept of Preserving Tradition.” Her company was born on the sole idea of creating authentic handcrafted foods in small batches from seasonal local produce. And in keeping with the traditions of the past generations--all of whom crafted with a copper pot and wooden spoon and would shake their heads at the overwhelming pace of a modern restaurant.
