If you’ve ever had a (tipsy) history lesson with a cocktail-enthusiast, you might know that bitters were essentially medicines before they ever made it into the world of mixology. Which is a similar trajectory Jesse took himself: he came into tonics and bitters through his line of work as an herbalist. “During graduate school, I began to see that most bitters were made from the same herbs we used in our medicines, so I began toying with recipes.” Turned out, the craft of making bitters directly used his herbal training-especially in being able to recognize the specific “personality” of a botanical and blending them properly. Who knew making medicine and crafting a perfect party beverage were so very similar?
