Husband-and-wife makers Luis and Marsha Morales believe the secret to delicious hot sauce isn’t as much about the heat as it is about the sauce. Favoring flavor over fire, they create all-natural blends from locally sourced, sustainable ingredients. The process itself is quite simple, but yields complex taste. After hand-selecting chiles from local farmers-turned-friends, the peppers are dried, pureed in small batches with fruits, veggies, herbs and spices, then aged for 60 days. This is where the magic happens. The flavors intensify while the heat mellows, allowing sweet or smoky notes to surface. In other words, it goes from hot to haute.
