When Katie was diagnosed with type 1 diabetes at 11-years-old, the doctor told her to substitute sugar with artificial sweeteners and buy foods marked “low sugar”—but she was not down with all the fake stuff. She and her mom experimented with cooking with LESS sugar and all kinds of low glycemic ingredients from a very young age.
