And when Ely and Garrett, who both have agricultural backgrounds, heard of it, they were intrigued. After streamlining their process in Ely's Gramma's Vermont barn, the duo picked up and moved shop to their Bushwick kitchen. There they form a human-powered assembly line, taking raw cider vinegar, pure Vermont maple syrup and ginger root––turning it all into energizing Switchel.
